How did you become involved in the Specialty?
I got involved in specialty coffee by jumping in to the pool of filter coffee, until at 2014 or 2015 i tasted my very first natural process ethiopian coffee that totally blew me away. Since then my curiousity and interest kept on growing and i knew that i wanted to be involved in specialty coffee, especially working with indonesian specialty coffees.
Why did you choose the Sibarist filters for the Brewers Cup Championship?
I chose Sibarist Filters for Brewers Cup due to the performance. These filters are like Formula One race cars. They are fast, they behave and 'turn' exactly the way i want and i need.
They also fulfill what my coffee need. I can produce a very sweet, flavourful, and juicy cup but still having lots of cleanliness and clarity.

Could you describe the recipe and coffee used? And what’s the reason of the set up?

I made a blend for brewers cup by layering 3 coffees in the dripper.
For both comps i used the MK Dripper, paired with Flat Fast Papers and Boosters.

The recipe is:

20gr coffee (around 700-750 Microns) 300gr water @ 93°C and 70ppm

5 x 60gr pours in every 30 seconds.

This set up produces a very sweet and rich cup, with very silky and juicy mouthfeel. Flavours are concentrated, but very clear, it's like right in front of your eyes.
FAST filters technology or B3 technology? Pros and cons?

Fast Filters. B3 Technology can be cleaner and lighter in my opinion, but sometimes the papers are more difficult to fold.

FLAT bed filters, CONE filers or HYBRID filters? Pros and cons?

Flatbed Filters. I don't think there's any cons with the other type of papers but i think the Flatbed Filters perform the best and really highlights the coffee'a potential more.

Why the BOOSTER?

The Booster helps me to eliminate the risk of producing bitter coffee or astringency in a cup. By using the Booster, it makes me have less worry that the cup's going to taste bitter even at high extractions and longer brew time.
Do you use or switch between filters depending on the coffee (origin, process, roast)? Sometimes yes, but mostly i stick to the Fast Flat Papers. And mostly i always get great results from any coffee by using the Fast Flat Papers.

Any other tip or comment you consider that could be useful for coffee lovers, fans, people with the aim to improve recipes and reach for the best extraction?

My tip is very simple. Just keep on brewing, trying, and tasting different coffees, recipes, brewing variables, brewing methods or drippers. Stay curious. Also, try bad extractions too! You can make great coffees by making bad coffees :)
