Its unique FAST Specialty Coffee Filter technology makes it possible to explore new extraction conditions and recipes, which have been limited until now.

The FLAT is the unique and original non-fluted flat-bottomed filter for coffee drippers, designed and registered by SIBARIST. It offers a unique, smooth and unobstructed area that offers the perfect and even space for brewing with full access to the coffee bed. It eliminates the bypass effect and provides the most even extraction with the maximum coffee particle yield, preventing coffee particles from being trapped in fluted areas.

No bypass

The air flow between the filter and the brewer is eliminated by the flat paper’s adhesion to the dripper walls when wet, thereby removing the “bypass” that can cause astringency in the cup.

prepare it

Fold the 4 edges of the filter following the indentation marks on the paper. It is not necessary to maintain the filter’s flat bottom shape; you just need to go over the folds.

Place the filter on top of the dripper and press the central part of the paper downwards.

Rinse the filter, starting from the centre and moving towards the outer edge by pouring hot water in a circular motion. Make sure that the entire surface of the filter adheres to the walls of the dripper, without leaving any air channels between the filter and the filter holder.

The CONE XL is a filter for coffee makers such as Chemex or V60 n3 drippers that is specifically designed to block air circulation and bypass while providing faster drawdowns for high-volume coffee extractions.

In extractions with large amounts of coffee, the saturation of the filter, the prolongation of extraction times and the bypass effect are particularly critical factors that have traditionally made it difficult to obtain the desired result.

No bypass design

The XL design offers a wider 60° angle that sticks to the dripper walls once wet, avoiding the creation of air channels and eliminating the bypass effect.

Explore finer grinds

Its good drawdown and low choke and clog effect makes it possible to explore finer grinds not normally used with this type of infusion with large amounts of coffee (usually coarser grinds).

Faster flow rate

The FAST Specialty Coffee filter technology enables a faster flow and drawdown, reducing the extraction time and over extraction (especially important with recipes with large amount of coffee).

Uniformity and clarity in cup

The elimination of bypass and the rapid flow rate provide more clarity and flavour to the result of these large extractions. Longer exposures and uneven flows can produce uneven or over-extraction and accentuate astringency.

prepare it

For correct filter functioning with the Chemex Classics, the XL must be placed with the sealed part inside the regatta “spout” typical of this coffeemaker.

Rinse the filter thoroughly so that it adheres to the whole filter holder wall, maintaining a single air channel across the spout area that will allow hot air to escape from the inside of the dripper and prevent the filter from blocking and generating air pockets toward the outside.
